A Taste of Tradition

Barbara Brown’s Corn Casserole

Bake Temperature: 350°F

Time: 1 hour

Serves: About 8

Ingredients

  • 1 can corn, drained
  • 1 can creamed corn
  • 1 box Jiffy cornbread mix
  • 1 Tbs. sugar
  • 1 stick butter, melted
  • 1 egg
  • 1 cup sour cream

Directions

  1. Mix all ingredients together in a bowl.
  2. Pour the mixture into a greased 9×9 casserole dish.
  3. Bake for 1 hour until golden brown.
  4. For an extra touch, sprinkle mozzarella or your favorite cheese on top and bake until melted.

Kim Lindley’s Sweet Potato Casserole (Ruth’s Chris Style)

Servings: 4

Ingredients

Crust Mixture:

  • 3/4 cup brown sugar
  • 1/4 cup flour
  • 3/4 cup chopped nuts (pecans preferred)
  • 1/4 cup melted butter

Sweet Potato Mixture:

  • 3/4 cup sugar
  • 1/4 tsp salt
  • 1/4 tsp vanilla
  • 2 cups mashed sweet potatoes
  • 1 egg, well beaten
  • 1/4 cup butter

Process

  1. Combine crust mixture ingredients in a bowl and set aside.
  2. In another bowl, combine sweet potato mixture ingredients thoroughly.
  3. Pour the sweet potato mixture into a buttered baking dish.
  4. Sprinkle the crust mixture evenly over the sweet potatoes.
  5. Bake at 350°F for 30 minutes.
  6. Allow to set for at least 30 minutes before serving.

Maureen Edsall’s Easy Cinnamon Rolls

Prep Time: 40 minutes

Cook Time: 1 hour

Yield: 10–12 rolls

Ingredients

Dough:

  • 2 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 3/4 cup whole milk
  • 3 Tbs unsalted butter
  • 2 1/4 tsp instant yeast
  • 1 large egg

Filling:

  • 3 Tbs unsalted butter, softened
  • 1/3 cup packed brown sugar
  • 1 Tbs ground cinnamon

Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • 2 Tbs butter, softened
  • 2/3 cup confectioners’ sugar
  • 1 tsp pure vanilla extract
  • 1 cup pecans (optional)

Directions

  1. Prepare the dough by whisking together flour, sugar, and salt. Heat milk and butter until warm, mix with yeast, then combine with dry ingredients and egg. Knead and rest.
  2. Roll dough into a rectangle, spread with butter, sprinkle with cinnamon sugar, and roll up. Cut into rolls and bake.
  3. Make icing by beating cream cheese with butter, sugar, and vanilla, then spread over warm rolls.

Waterford Blaas (Soft Dinner Rolls)

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Servings: 12

Ingredients

  • 2/3 cup warm water
  • 1 1/2 tablespoons dry active yeast
  • 1 teaspoon sugar
  • 1 1/3 cups water
  • 1 teaspoon salt
  • 5 1/2 cups bread flour

Directions

  1. Dissolve yeast and sugar in warm water, allow to activate.
  2. Add salt to flour, combine with yeasty water and additional water. Knead dough and allow to proof.
  3. Knock back, proof again, then shape into rolls.
  4. Bake at 425°F until crisp on bottom but not too brown on top.

Kaye Jones’ Carrot Cake

Ingredients

  • 2 cups sugar
  • 1 cup canola oil
  • 4 eggs
  • 1 tsp vanilla
  • 2 1/2 cups self-rising flour
  • 1 1/2 tsp cinnamon
  • 3 cups grated carrots

Icing:

  • 1 box powdered sugar
  • 1 stick butter
  • 1 tsp vanilla
  • 8 oz cream cheese
  • 1 1/2 cups chopped pecans

Directions

  1. Cream together sugar and eggs, add vanilla and oil. Gradually mix in flour and cinnamon, then fold in carrots.
  2. Divide batter into layers and bake at 350°F for 40–45 minutes.
  3. For icing, blend all ingredients and spread over cooled layers.
