Cooking with Sam – Beignets
½ oz Yeast
3 Cups Warm Water
1 Cup Sugar
2 Cups Evaporated Milk
4 Eggs
2 Teaspoons Salt
½ Cup Butter
13 Cups of Flour
Bloom yeast in the water for about 10 minutes. Add all other ingredients to the mixer, use a dough hook. Add yeast to the mixture. Mix until dough forms. Let it rest for 20 minutes.
Roll the dough out to about 1/4-inch thickness and cut into 1-inch squares. Deep-fry, flipping constantly until they become a golden color. After beignets are fried, drain them for a few seconds on paper towels, and then toss them into the bag of confectioners’ sugar.
